Arthur Dunham is progressive. He invested in healthy vending machines well before the new regulations. In 2011, faced with a stagnant menu, he let students choose new menu items that met federal guidelines and participation increased. He started farm-to-school promotions, which were a huge achievement in the only county in Florida with no farmland. To further increase fresh produce consumption and create a new revenue stream, Arthur purchased machines to make vitamin-packed smoothies with commodity fresh fruits and vegetables. He gives all students access to free breakfast on school days and he started a dinner program in key schools that allows parents to eat a hot dinner with their children at school before taking them home. Palm scanners move students through the line faster so they have more time to eat and digital signage showcases the menu and nutrition information. Both students and parents have online access to the menu and nutritionals through the website and a Smartphone app. Arthur Dunham is definitely a role model for innovation and creativity.
